Ingredients

Quantity Ingredient
2kg ripe tomatoes
3 garlic cloves, smashed and finely chopped
2.5cm piece ginger, smashed and finely chopped
2-3 tablespoons ground chilli
1 tablespoon salt
250g sultanas
500g sugar
600g malt vinegar

Method

  1. Skin the tomatoes and quarter them. Put the tomatoes, garlic, ginger, chilli and salt into a saucepan and cook the tomatoes almost to a pulp (they should still be a little bit chunky). Add the sultanas, sugar and vinegar and cook until thick. Cool and bottle.
  2. Tomato chutney is a good keeping chutney. Other chutneys which keep, such as mango chutney, are easily available in jars. Buying them helps to provide variety. A sweet mango chutney goes particularly well with north Indian mutton dishes.
