Method

  1. Peel and mix an equal amount of diced tomatoes and finely chopped brown onions. Toss with sliced green chillies, chopped coriander leaves, salt, black pepper and lime juice to taste. This is a good everyday dish.
  2. Alternatively, if you want it sweetish and not hot, toss tomatoes and onion together – use about 3 large tomatoes and 3 onions. Heat 3 tablespoons white vinegar and 11⁄2 tablespoons sugar until the sugar dissolves. Allow to cool, add water to dilute a little and pour over the tomato and onion mixture. Add chopped coriander leaves and toss. Put in refrigerator until ready.
  3. Diced cucumber may also be added to tomato and onion salads.
