Ingredients

Quantity Ingredient
1 green cucumber, about 20 cm long
1 green chilli, finely sliced
3 shallots, finely sliced
a little thin coconut milk

Method

  1. Cut a small slice off one end of the cucumber and rub the two cut surfaces together in a circular motion for about 30 seconds, thus removing any possible bitterness. Peel it, slice it in half lengthwise and remove the seeds, then score the outside with a fork and slice it finely.
  2. Toss the cucumber, chilli and shallots together and place in a serving dish. Pour over a very little thin coconut milk (enough for the salad to sit in) and place in the refrigerator until you are ready. Add salt just before serving. Some people also squeeze over lime juice at this stage.
