Sliced chicken in paper

Ingredients

Quantity Ingredient
500g chicken breast, boned and thinly sliced across the grain
2 tablespoons chinese oyster sauce
2 teaspoons sesame oil
pinch pepper
2 teaspoons medium sweet sherry
1.5cm piece fresh ginger, thinly sliced and then cut into shreds
1 small packet frozen peas
8 chinese mushroons, soaked and hard stems removed, sliced
oil, for deep-frying

Method

  1. Season the meat with the oyster sauce, sesame oil, pepper and sherry, then mix it with the ginger. Cut greaseproof paper into 15 cm squares, put a teaspoon of peas, one of meat and 2 or 3 slices of mushroom on to each square, and wrap it up as described in the recipe for Fried chicken wrapped in paper. Deep-fry the packets in hot oil for 10–15 minutes, turning occasionally. Serve the chicken in its paper packets.
