Ingredients

Quantity Ingredient
salt, to taste
1 tablespoon soya sauce
1 teaspoon sugar
2 teaspoons dry sherry
1 teaspoon ginger juice
pinch pepper
1 teaspoon cornflour
500g pork or beef, cut crossways into broad thin slices
60g streaky bacon, cut into strips of similar size to the meat
125g pork liver, lightly steamed or poached and thinly sliced
125g shredded bamboo shoots

Method

  1. Mix together the salt, soya sauce, sugar, sherry, ginger juice, pepper and cornflour, and marinate the pork or beef slices in this for 30 minutes.
  2. Spread each meat slice flat, place strips of bacon, liver and bamboo shoots over them, roll up and skewer with a toothpick. Heat a little oil in a pan and fry the rolls until they are brown. Serve with chilli sauce.
