Ingredients

Quantity Ingredient
2 tablespoons vegetable oil
2 slices fresh ginger, chopped, plus a little extra
3 spring onions, chopped
1/2 can button mushrooms
1 cup finely chopped minced meat
1/2 cup cooked green peas
salt
pepper
1-2 tablespoons light soya sauce
6 eggs, lightly beaten

Method

  1. Heat the oil in a wok or pan. Brown the ginger. Add the other ingredients except the eggs and stir-fry until cooked. Add the lightly beaten eggs, allow to half set, then stir gently and leave to set like an omelette and brown on the bottom. Garnish with finely chopped spring onions.
