As with all the local ingredients, each Greek island has its own special fish dishes, like the pearly wrasse cooked in garlic in southern Rhodes or Corfu’s bianco seafood stew, but some dishes are common to almost all the islands: chargrilled octopus; fried or grilled sardines; shellfish cooked with feta and tomatoes; or kakavia, a fish soup that fishermen used to make on their boats using the small fish they knew they couldn’t sell that day.
