Another wonderful example of island cooks making the best of the ingredients around them, this is a very old recipe from Milos. It is a really unusual tart that – quite honestly – will look as though it’s never going to work, but will come out of the oven magically transformed into a beautiful deep pink dessert. This is another recipe from Vasiliki Drounga, who owns Paleos, a cake and pastry shop in Plaka, on Milos.

Ingredients

125g caster sugar
150g plain flour, plus more to dust
850g watermelon, skin and seeds removed and cut into chestnut- sized pieces
90ml olive oil
1 tablespoon raw sesame seeds
1/2 teaspoon ground cinnamon, to serve
clear honey, to serve

Method

  1. Preheat the oven to 200ºC. Have ready a non-stick cake tin, ideally 30 cm round with sides at least 4 cm high and with a fixed base (this recipe contains a lot of liquid which will run out if you use a tin with a loose base).
  2. In a large bowl, mix the sugar and flour together. Then add the watermelon pieces and gently stir to mix, but not too much or the watermelon will fall apart. You should have a loose, pale pink batter full of chunks of watermelon. It will look like pink scrambled eggs and you will never believe it will work at this stage! Keep the faith; it will.
  3. Pour the oil into the cake tin and tilt it to ensure the entire base and sides are covered, then pour the watermelon mix on top. Spread it out, gently, so that it lies in an even layer across the tin. Scatter the sesame seeds over the top and place in the hot oven. Bake for 1–1½ hours, or until the batter has turned golden brown on top, is brown on the bottom and the edges are pulling away from the sides of the pan. Remove from the oven and cool in the tin, then use a spatula to gently lift it out of the tin. Serve warm, dusted with cinnamon and drizzled with a little honey.
