Frozen Greek yoghurt with berries

This simple but creamy frozen yoghurt dessert can be made without an ice cream machine.

Ingredients

Quantity Ingredient
500g greek yoghurt
caster sugar
100g fresh or frozen berries

Method

  1. Line a sieve with muslin or paper towels and pour in the yoghurt. Set aside to drain for a couple of hours. Discard the liquid.
  2. Once the yoghurt has drained and thickened, beat in 2 teaspoons of sugar with a whisk. Pour into a plastic tub or bowl and cover with a lid or plastic wrap. Place in the freezer. After 1 hour, remove from the freezer and stir vigorously with a fork. Repeat the freezing and the stirring twice. If you need to leave it for longer (or accidentally forget about it!), break the frozen yoghurt into chunks, place in the food processor and blitz until smooth again. Return to the freezer for 5 minutes before serving.
  3. Meanwhile, prepare the berries. Place in a pan with 2 more tablespoons of sugar over a medium heat and cook until just beginning to fall apart and release their juice. Taste and add more sugar, if necessary. Cool.
  4. Serve the frozen yoghurt with the fruit spooned over.
