Ingredients

Quantity Ingredient
1 tablespoon cornflour
375ml milk
250ml pouring cream
75g sugar
1/4 teaspoon salt
375ml coca-cola
2 tablespoons glucose or corn syrup
1/2 vanilla bean, split lengthways and seeds scraped
60g cream cheese
12 ice block sticks

Method

  1. In a bowl, stir together the cornflour and 60 ml of the milk to make a slurry. Set aside.
  2. Whisk together the remaining milk, the cream, sugar, salt, Coca-Cola and glucose in a small saucepan. Scrape the seeds of the vanilla bean into the mixture and whisk until combined. Bring the mixture to the boil over a low heat then stir in the cornflour slurry. Cook, stirring, for about 2–3 minutes, or until thickened.
  3. In a bowl, combine the cream cheese with 60 ml of the hot liquid and whisk until smooth. Stir in the remaining mixture. Cover the mixture with plastic wrap and refrigerate for 1 hour.
  4. Once completely chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  5. Divide the churned mixture between 12 ice block moulds and insert a wooden ice block stick into the base of each ice cream. Place in the freezer to set.
