I like to use cheap cooking chocolate for this. I feel it gets the best result and doesn’t overpower the airy yeast donut. Traditionally lamingtons don’t have jam, but I think a little in the bullseye really pops it off. Be sure to get a low-quality chocolate but a high-quality raspberry jam.

Ingredients

Quantity Ingredient
150g dark cooking chocolate, broken into small pieces
1 quantity Donuts, (use round donuts instead of rings)
15g desiccated coconut
raspberry jam, to serve

Method

  1. Melt the chocolate in a heat-proof bowl placed over a saucepan of simmering water. Alternatively, put the chocolate in a bowl and microwave on high (100%) in three 10-second bursts, stirring after each burst, until the chocolate has just melted.
  2. Dunk the donuts in the chocolate. I like to get good coverage all over – kinda like on a lamington. Place the covered donuts on a wire rack to cool slightly then sprinkle with the coconut and add a teaspoon of raspberry jam to the centre.
