Strawberry, elderflower and apple jellies

Taking inspiration from the English summer garden, this dessert is really light and refreshing. Sensual flavours hide its simplicity, as it uses only a few fresh ingredients. To add an exotic crunch we use pistachio nuts, but it works equally well with a light sprinkling of finely chopped mint leaves.

Ingredients

Quantity Ingredient
1 large dessert apple, peeled, cored and cubed
3 tablespoons elderflower cordial
175ml apple and elderflower juice
10 large strawberries, (160g)
or 14 medium strawberries
1/2 sachet powdered gelatine
chopped pistachios, to serve

Method

  1. Place the apple in a small pan with the elderflower cordial and the apple and elderflower juice. Bring to the boil and simmer for five minutes.
  2. Retain your two prettiest strawberries for decoration and quarter the rest. Add the chopped strawberries to the apple mix and continue to cook for one minute. This will give your liquid a lovely pink colour. Strain out the fruit and set aside, then return the juices to the pan.
  3. Heat the liquid gently, sprinkle on the gelatine and whisk vigorously until fully dissolved.
  4. Divide the apple and strawberries between two serving dishes and pour the jelly evenly over the fruit.
  5. Put in the fridge for about 45 minutes to set. Serve with the reserved strawberries on top and sprinkled with pistachios.

Top Tip:

  • Try this with elderflower liqueur instead of cordial.
