The cool, refreshing flavour of the cucumber superbly complements the sweetness of the melon, resulting in an invigorating, light smoothie with a hint of lime.

Ingredients

Quantity Ingredient
1/2 cantaloupe melon, deseeded
1/2 cucumber
1 lime

Method

  1. Scoop out the melon flesh and place in a blender. Add the cucumber and blend for two or three minutes. If the bits are sticking and refusing to break down, switch off the blender, stir briefly, then blend again.
  2. Slice the lime in half, squeeze the juice into a bowl and remove any pips. Add all the juice and any lime flesh to the blender and blend briefly.
