This moist and fruity celebration cake is a great alternative to a Christmas cake. With two portions of your five-a-day per slice, it combines a unique mix of courgette, carrot and banana, complemented by sweet raisins and apricots. No-one would ever guess how much goodness is in this cake!

Ingredients

150ml rapeseed oil, plus more for the tin
1 courgette, (160g)
225g plain flour
2 teaspoons baking powder
1 teaspoon bicarbonate of soda
1 teaspoon sea salt
100g soft brown sugar
30g pine nuts, plus more for the top
120g raisins or sultanas
12 dried apricots, chopped
4 medium ripe bananas, mashed, (320g)
3 eggs, lightly beaten
2 small carrots, grated, (160g)

Method

  1. Preheat the oven to 200°C. Oil a 23cm cake tin, preferably one with a springform base.
  2. Grate the courgette. If it is very wet, let it drain for a short while in a colander or sieve, then press out excess moisture.
  3. Sift the flour into a large bowl. Add the baking powder, bicarbonate of soda and salt. Mix in the sugar, pine nuts, raisins and apricots.
  4. Add the bananas and eggs to the dry mix and stir, mixing in the grated carrots and courgette. Add the oil and beat thoroughly for one minute until you get a thick and slightly lumpy batter.
  5. Spoon the batter into the prepared tin, sprinkle with a few more pine nuts and bake in the oven for 60 minutes, or until a skewer inserted into the centre comes out clean. Leave to stand for a few minutes before removing the cake from the tin. Make sure the cake is cold before slicing.
