Blood orange, pumpkin and flaxseed smoothie

This breakfast smoothie is enhanced by the addition of flaxseed which is full of omega 3. Substitute the pumpkin with butternut squash if the former is not in season. The lemon adds a tang that will get you going in the morning.

Ingredients

Quantity Ingredient
2 cm-thick chunk or slice pumpkin or butternut squash, (80g)
2 blood oranges
1/2 lemon
200ml orange juice
1 ripe pear
1 level tablespoon flaxseed

Method

  1. Peel and finely grate the pumpkin and add to the blender. Squeeze the oranges and lemon into the blender through a sieve and add the extra orange juice.
  2. Peel, quarter and core the pear and add to the blender with the flaxseed. Blend everything for three to five minutes.
