Pasta and cheese is a universal favourite amongst kids, so it’s a wise choice for sneaking in a few extra veg. Our cheese sauce recipe is really quick and easy, although a shop-bought version would make this dish super-convenient (but home-made tastes better!). This is delicious with bacon, too.

For the cheese sauce

25g unsalted butter
25g plain flour
300ml milk
pinch freshly grated nutmeg
75g mature cheddar cheese, grated, plus more for the top
sea salt
freshly ground black pepper

350g tub of ready-made cheese sauce

For the rest

100g macaroni or penne
1 tablespoon unsalted butter
1 small leek, trimmed and finely sliced, (80g)
handful cauliflower florets, broken into small pieces, (80g)
handful broccoli florets, broken into small pieces, (80g)
3 heaped tablespoons frozen peas, defrosted, (80g)
80g spinach, shredded

Method

  1. Preheat the oven to 200°C.
  2. Make the cheese sauce (if making home-made) by putting all the ingredients except the cheese in a small saucepan. Whisk continuously over a medium heat until the sauce boils and thickens. Reduce the heat and cook for a further minute, stirring continuously. Remove from the heat, stir in the cheese and season to taste.
  3. Boil some water with a pinch of salt and cook the pasta according to the packet instructions.
  4. Meanwhile, heat the 1 tbsp of butter in a heavy-based saucepan and sauté the leek for a couple of minutes, then add the cauliflower and broccoli. Continue cooking for about five minutes until the cauliflower and broccoli have softened. Add the peas and spinach and cook for a further two minutes until the spinach has wilted.
  5. Mix the vegetables with 1 tbsp of the cheese sauce and spoon into an ovenproof dish. Mix the pasta with the remaining cheese sauce and lay on top of the vegetables. Sprinkle with some grated cheese and bake for about 20 minutes until golden brown on top.
