In this North Indian delicacy, roasted eggplant is the star. There are many varieties of eggplant, but this recipe is best made with the medium-sized round or long purple varieties. For the best flavour and texture, buy eggplants when they are in season and opt for the smaller, seedless ones that feel heavy for their size. Enjoy this dish hot, with Chapattis or Parathas.
