As a child, I loved helping my extended family shell the peas to make this simple, fresh and delicious recipe. Many winter afternoons in Delhi were spent sitting in the warmth of the sun with a huge stack of fresh peas, discussing the really important issues of life, such as what should accompany the green peas at dinner! To do justice to the delicate flavours of this dish, you should really use fresh peas. You can use frozen peas, but the results will not be as good. Also, eat it on its own so you can taste every element.

Ingredients

Quantity Ingredient
310g shelled fresh or frozen peas
15g Ghee
or salted butter
1 green chilli
1 teaspoon Ginger paste
1/2 teaspoon sugar
1 tablespoon lemon juice
1/2-1 teaspoon salt, or to taste

Method

  1. Cook the peas in a large saucepan of boiling salted water over a high heat for 2–3 minutes, or until just tender. Drain and rinse under cold water.
  2. Heat the ghee or butter in a large frying pan over a medium heat. Sauté the chilli and ginger paste, stirring continuously, for about 30 seconds. Stir in the peas and sugar and cook, stirring occasionally, for 2–4 minutes, or until heated through and the sugar has dissolved.
  3. Quickly toss the lemon juice and salt through the peas, then serve.
