By far the most common side dish served with an Indian meal is rice. Steamed or fried, simple or elaborate with multiple ingredients, this humble grain features heavily throughout Indian cuisine.

There are many varieties of rice in India, from 'red' Kerala rice to simple long-grain rice. By far the most important and well-known long-grain rice is basmati. This rice originates from a village of the same name in the Himalayan foothills, and has a lovely elegant slender structure, is very low in starch and the only rice recommended for diabetics because of its low glycaemic index. Basmati rice is readily available in supermarkets or Indian grocery stores. Look on the packet to see the age of the rice – new crops or just-harvested rice should be stored for up to five years to allow the flavours to develop and the starch content to lessen. Try to buy alreadyaged rice, which has a creamier colour and is generally more expensive. Aged rice will cook without getting gluggy or breaking up and will result in a nicer flavour.

Other side dishes can include lentils, vegetables or salads, and are often accompanied with chutneys to contribute to a larger Indian feast. Vegetable dishes such as Poppy seed potatoes, fruity salads such as Mango and pineapple salad, as well as the traditional Onion salad feature regularly. Finally, dal – a soupy lentil preparation – is probably the most popular comfort food and is served with almost all Indian meals.
