Pooris are a quintessential street food, fried in open kitchens in city cafés, or on food carts in train and bus stations. They are a traditional part of the thali meal – an array of five or six curries, both meat and vegetarian, presented in little bowls or on a metal plate along with rice, pickles and chutneys. Pooris are usually served with a simple potato or pumpkin curry, sometimes with sweet dishes such as a rice pudding, or most simply of all, just sprinkled with sugar. They can be covered with plastic wrap and kept at room temperature for six to eight hours. If you are keeping them for longer, put them in the refrigerator, where they will last for up to two days.

Ingredients

150g atta flour
pinch salt
30g Ghee
or 2 tablespoons vegetable or canola oil
vegetable or canola oil, for deep-frying

Method

  1. Put the flour, salt and ghee or oil in a large bowl. Gradually pour in 125 ml water while working the ingredients together, adding a little more water if necessary to make a stiff but not sticky dough, which is not very pliable but holds together well. Turn out onto a lightly floured work surface and knead for 5 minutes, or until the dough feels smooth and holds together as one piece without sticking. Place the dough in a clean bowl, cover with a damp cloth and rest for 20 minutes.
  2. Divide the dough into 10 balls, each about the size of a large marble. On a lightly oiled work surface, roll out each piece of dough with a rolling pin to form a small circle about 5 cm in diameter and 1 cm thick.
  3. Heat the oil in a wok or deep-fryer to 200°C.
  4. Deep-fry each poori for about 40 seconds, or until golden brown and puffed up, turning once with a slotted spoon and using the spoon to lightly press down on the poori as it puffs up. Remove from the oil and drain on kitchen towels. Serve hot.
