Brazilian blended pineapple and passionfruit cocktail

Tropical fruits are bountiful in Brazil. Colourful displays can be seen at juice bars throughout Rio de Janeiro, where they are commonly used to make vitamin-rich juices. Many of these exotic fruits are not available outside the region, however passionfruit and pineapple, both native to Brazil, are now grown in warmer regions throughout the world. Here they are blended with cachaça to make a refreshing jug of batida.

Ingredients

Quantity Ingredient
1 1/2 cups cachaca
600g fresh pineapple, skin and core removed and flesh roughly chopped
2 cups passionfruit pulp
1-2 tablespoons lime juice
1 1/2 tablespoons caster sugar
4 cups crushed ice, plus extra to fill the jug

Method

  1. Combine all of the ingredients in a blender and blend until smooth.
  2. Transfer to a jug and top up with extra crushed ice, to serve.

Note

  • You can substitute any clear unflavoured vodka if cachaça is unavailable.
