You might think it’s cheating to use elderflower cordial – I call it a time-saving tip. I find that the lemon thyme gives this drink an unusual and homemade flavour, balancing the sweetness to make it more interesting. Honestly, the lemon thyme really adds a flourish, so don’t feel guilty about using cordial.

Ingredients

Quantity Ingredient
125ml elderflower cordial
3 sprigs lemon thyme
ice cubes, for serving

Method

  1. Put the cordial into a small saucepan with the lemon thyme. Bring it to the boil and let simmer for 2 minutes.
  2. Lift the pan from the heat and using a slotted spoon, remove the lemon thyme from the liquid and discard. Pour the cordial into a large jug or punch bowl. Add 1 litre of cold water, some ice cubes and serve in glasses.

Substitute the lemon thyme with...

  • Mint, lavender or oregano.
