Other than providing ingredients for your recipes, the best thing about a herb garden is being able to sit out in it – admiring the colours and fragrance, spotting bees drone lazily past or having a drink in the early evening sunlight.

Herbs and flowers lend themselves to drinks. Used for centuries as teas, they’re so much more versatile than we imagine. The brilliance of mint in a mojito is well documented, but there are plenty of other cocktails that work just as beautifully.

A few of these recipes require a bit of overnight infusion, but some are so simple you can keep making them all night, refreshing glasses no matter how unsteady you get. There are non-alcoholic coolers too, but few would judge you if you added a slug of the spirit of your choice.

As with every recipe, botanical notes are there to enhance the flavour, but with drinks you can pretty much add any herb or flower you have to hand. Experiment, change the flavours, enjoy yourself. That’s what drinking is all about, after all.
