Having a good repertoire when it comes to soups will stand you in good stead, both when entertaining and feeding the family. I often start a dinner with a little cup of something delicious to get the taste buds going. In summer a gazpacho or a chilled pea soup, or in spring an asparagus velouté or a carrot soup with scallop and amaretti biscuit crumbs. In winter I will often serve a soup as the main meal – something hearty and filling, like my pumpkin, barley and pancetta or steaming bowls of green vegetable soup with lots of basil pesto and crusty bread. Soups are the ultimate comfort food. Soothing or invigorating, served as an ‘amuse bouche’ before a meal, as a first course or a snack, they are one of my favourite things to make, eat and serve. My ideal lunch would be a fabulous soup, a simple salad, good bread and a glass of wine. What more could you want?
