Bread and butter pudding

This British classic has found its way into the hearts of many Sri Lankans. My mum taught me how to make this. It’s a great way to use up stale bread.

Ingredients

Quantity Ingredient
500ml milk
225g stale bread, broken into small pieces
5 eggs, at room temperature
55g unsalted butter or margarine
175g white sugar
2 teaspoon vanilla essence
85g raisins, (optional)
225g sweet marmalade or jam

Method

  1. Preheat the oven to 200°C.
  2. Bring the milk to the boil in a saucepan, then remove from the heat. Add the bread and leave to soak for 15 minutes.
  3. Beat the eggs and sugar well in a bowl, then add the bread mixture, vanilla essence and raisins and mix well.
  4. Coat the insides of a 30 x 15 cm, 1 litre capacity baking dish with the marmalade and add the pudding mixture. Cover with foil, place the dish in a roasting tray and add enough water to reach halfway up the sides of the baking dish. Bake for about 40 minutes or until the custard is set. Remove from oven and carefully invert onto a serving dish.
