This is a simple dish that relies on the best quality large, firm prawns you can find. Do not choose prawns with black or droopy heads and if possible, buy them frozen and defrost them under cool running water as you need them. Prawns are an expensive product, so it’s important to handle them well so you get the best value for money. If you’re going out to buy prawns or any seafood, ensure you take an ice box. As soon as you have purchased your seafood, place it in ice so it stays fresh.

Ingredients

Quantity Ingredient
6 large raw king prawns, unshelled
lemon halves, wrapped in muslin, to serve
1/2 cup Aioli, to serve

Method

  1. Cook the prawns in boiling salted water for 3 minutes, then drain and refresh in iced water. Drain again. Peel and devein the prawns leaving the tails intact. Serve with the aioli for dipping and lemon halves for squeezing over.
