Cauliflower really isn't eaten as much as it should be. In Sri Lankan cookery the cauliflower is loved. It has a great texture and flavour and takes to spice well. I used to love finding beautiful little perfect cauliflowers when shopping with my aunties.

Ingredients

Quantity Ingredient
500g cauliflower, cut into florets
40-60g butter
1 teaspoon brown mustard seeds
garlic, finely chopped
1 small onion, finely chopped
1/2 teaspoon ground turmeric
2 tablespoons coriander, chopped
1/2 teaspoon chilli, or if you want it hot, you can add more
2 small green chillies, chopped
salt and ground black pepper, to taste
150g frozen peas

Method

  1. Bring a saucepan of water to the boil. Add the cauliflower and cook for 5 minutes or until tender. Drain and set aside.
  2. Melt the butter in a frying pan over medium heat, add the mustard seeds, garlic and onion and cook until so and translucent.
  3. Add the turmeric and then the cauliflower and stir to mix well. Add the chilli flakes and green chilli, season with salt and pepper and stir well. Simmer for 5–8 minutes, adding the peas in the last few minutes of cooking.
