Created years ago at Blue Water Grill in Bondi Beach, I do not think there is a better sauce for octopus, grilled or in a salad. Don’t taste it too many times when making it as you will eventually only be able to taste the sesame oil and nothing else. Use in the octopus, surf clams and udon noodle salad.

Ingredients

Quantity Ingredient
100g golden syrup
100ml olive oil
75ml sesame oil
75ml balsamic vinegar
1/2 bunch coriander, leaves and stalks chopped
1 bird’s eye chilli, seeds removed and chopped

Method

  1. Whisk the golden syrup, oils and vinegar together in a bowl. Add the remaining ingredients and stir to combine. Set aside until needed and give it a good whisk before using.
