Spicy and tasty, this is similar to a Thai papaya salad. Choose a green but mature papaya, in which the inside has started to turn red but the flesh is still hard. Serve with seared wahoo, with snake beans.

Ingredients

Quantity Ingredient
1 green but mature papaya, peeled
2 red bird’s eye chillies
1 tablespoon soft brown or grated palm sugar
garlic
50ml fish sauce, or to taste
1 lime, juiced

Method

  1. Peel the papaya. Using a vegetable peeler or knife, cut the papaya into long thin strips and place in a bowl. Discard the seeds.
  2. Place the chilli, sugar, garlic and fish sauce in a mortar and pestle and grind to a coarse paste. Add the lime juice and adjust with a little more fish sauce if necessary. Just before serving, add the dressing to the papaya and toss to combine.
