Everyone loves mangoes in season. Here’s what to do with them when you have too many.

Ingredients

Quantity Ingredient
2 green but mature mangoes, peeled and cut into 2 cm thick cubes
2 tablespoons french shallot, finely chopped
1 small onion, diced
1 spring onion, thinly sliced
1 small red chilli, seeds removed and chopped
garlic, minced
1 lime, juiced
salt and ground black pepper, to taste

Method

  1. Combine all of the ingredients in a bowl and mix well. Check for flavour and balance. The salsa should be sweet, sour and spicy.
