This sauce epitomises Pinoy cuisine. The addition of peanut butter makes it out of this world. Serve with beef or chicken.

Ingredients

Quantity Ingredient
125ml vegetable oil
80ml annatto oil
3 garlic, minced
1 small onion, diced
1 tablespoon crunchy peanut butter
1 tablespoon smooth peanut butter
1 litre beef stock
1/4 cup ground toasted rice

Method

  1. Heat the vegetable oil and annatto oil in a large saucepan or wok over medium heat, add the garlic and onion and cook until golden. Add the peanut butters and reserved stock and simmer until reduced by half. Add the toasted rice and stir until thick and gelatinous. Remove from the heat and keep warm.
