A cooling salad and great accompaniment to a hot curry.

Ingredients

Quantity Ingredient
1 large cucumber
1 tomato
1/2 cup fresh pineapple chunks
2 tablespoons white sugar
1 tablespoon white vinegar
pinch red chilli powder
salt and ground black pepper
lime juice, to taste

Method

  1. Peel the cucumber and cut the flesh into small cubes. Cut the tomato, capsicum and pineapple (if the chunks are too big) into small cubes. Place all of the ingredients in a bowl, season with salt, pepper and lime juice and mix well.
