When a coconut germinates, the centre of the nut fills with a soft but crunchy apple-like mass. It is absolutely beautiful to eat. It may be difficult to find, so you can substitute peeled apple instead.

Ingredients

Quantity Ingredient
2 coconut hearts, thinly sliced
or 1 granny smith apple, thinly sliced
3 vine-ripened tomatoes, thinly sliced
1 lime, juiced
50ml olive oil
salt and ground black pepper, to taste

Method

  1. Arrange the coconut heart and tomato in alternate slices on a platter. Dress with the lime juice and oil and season with salt and pepper.
