Fresh and light, this is a great accompaniment to a piece of grilled fish or red meat.

Ingredients

Quantity Ingredient
200g green beans, trimmed
3 spirgs flat-leaf parsley, leaves picked
2 tablespoons capers in brine, drained and chopped
50ml olive oil
salt and ground black pepper, to taste

Method

  1. Blanch the beans in a saucepan of boiling salted water, then drain and refresh in iced water. Drain again, combine with the parsley, capers and oil. Season with salt and pepper and set aside.
