Utensils are not always available on the islands and cooking on an open fire can add unwanted foreign matter to your food. Throwing the bananas on whole keeps the insides moist and gives the bananas a beautiful smoky flavour. The bananas must be of the cooking variety so they end up soft and tasty. Serve with seafood cakes.

Ingredients

Quantity Ingredient
2 cooking bananas per person, unpeeled

Method

  1. Place bananas in the coals of a fire or on a hot barbecue grill plate. Cook, turning occasionally, until blackened all over and a knife slides through them easily. Remove from the fire and cool for 5 minutes before removing the peel and eating.
