When I was working in Fiji, my staff used to call the canapés at the beginning of a meal ‘pickies’. One of the pickies we had on the menu were these breadfruit chips — they taste so good and have a lovely crunch to them.

Ingredients

Quantity Ingredient
300ml vegetable oil
1 breadfruit, peeled and thinly sliced
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon red chilli powder

Method

  1. Heat the oil in a saucepan over high heat until it reaches smoking point. Add the breadfruit and deep-fry, stirring occasionally, until crisp and golden. Remove with a slotted spoon and drain on paper towel.
  2. Place the salt, pepper and chilli powder in a bowl and toss the breadfruit chips in the mixture to coat.
