Seaside seafood cocktail with taro chips

The prawn cocktail has been reborn in Australia and the United Kingdom and this is its Mexican cousin, inspired by the street food of Mexico – in particular the Baja coast and Campechana. It’s a riot of seafood and flavour and you can use whatever seafood you like – the more the merrier! Serve with piles of corn (tortilla) or vegetable chips. Here I have recommended taro chips.

Ingredients

1 litre Basic Mexican gazpacho
2 avocados, sliced, to garnish
extra-virgin olive oil, for drizzling
Taro chips, to serve

Seafood cocktail salad

Quantity Ingredient
100g cooked prawn meat, diced
100g cooked mussels, diced
100g cooked crabmeat
100g cooked clam meat
100g cooked octopus, diced
2 white onions, thinly sliced
100g breakfast radishes, finely julienned
2 jalapenos, seeded and finely julienned
1 large handful coriander leaves, coarsely chopped
1 large handful flat-leaf parsley, coarsely chopped
50ml Latin vinaigrette

Method

  1. To prepare the seafood cocktail salad mixture, combine the seafood with the onion, radish, jalapeño, coriander and parsley in a medium bowl. Add the Latin vinaigrette and toss to coat.
  2. To serve, pour approximately 125 ml of the gazpacho into tall retro sundae or Marie Antoinette glasses. Divide the seafood salad among the glasses and top up with gazpacho until almost overflowing. Garnish with avocado slices and drizzle with olive oil. Serve with the taro chips.

Paul’s tip

  • You can replace the gazpacho with 800 ml tomato juice blended with the grated zest and juice of 2 oranges and 200 ml Adobo sauce or 100 g chipotle in adobo sauce (see Glossary).
