A soft, fragrant filling for individual chocolates. Cardamom and chocolate are a unique combination, with cardamom adding a warm, spicy depth of flavour. Any leftover mix can be frozen for later use, or used as icing on raw desserts.

Ingredients

Quantity Ingredient
10 medjool dates, pitted
120ml coconut cream
5 cardamom pods, seeds only
2 1/2 tablespoons cacao powder
2-3 x 45g bars of pana chocolate raw cacao

Equipment

high-speed blender
piping bag
chocolate moulds, (or similar)

Method

  1. Blend all ingredients into a high-speed blender until very smooth.
  2. Transfer the blended mixture into a piping bag and pipe a small amount into each lined chocolate mould.
  3. Close the moulds with chocolate and set in the fridge for at least 2 hours. Once set, knock the chocolates out of the moulds.
