Ingredients

Quantity Ingredient
400ml coconut cream
sweetener of your choice, to taste
1 vanilla bean, split lengthways and seeds scraped

Method

  1. Refrigerate the coconut cream overnight.
  2. Drain any remaining liquid from the cream, then pour the solidified cream into a chilled bowl, along with the sweetener and vanilla seeds.
  3. Whisk the mixture with an electric beater until it resembles whipped cream. Be careful not to over whisk, as this will melt the cream, causing it to collapse.
  4. Refrigerate until needed.
