Ingredients

Quantity Ingredient
80ml coconut cream
50g coconut meat
150ml coconut water
80ml rice malt syrup
40ml coconut oil, melted over a bain-marie

Method

  1. Blend all the ingredients except for the coconut oil in a highspeed blender until extra smooth.
  2. Add the melted coconut oil and blend until the oil has been well incorporated and the mixture is very smooth.
  3. Pour the mixture into a shallow container and freeze overnight.
  4. Scoop the frozen mixture into a food processor, then blitz to break up the ice crystals, making the ice cream smooth.
  5. Scoop the ice cream and serve immediately.
