Prawn saganaki with tomato, feta and basil

In Australia the word ‘saganaki’ has become synonymous with a type of cheese, but it is actually the word for a small, shallow, two-handled pan in which the cheese is often cooked. A saganaki is used for many dishes that are cooked in the oven or on the stovetop and then served directly at the table. You don’t have to use a saganaki pan to cook this dish, of course, an ovenproof frying pan will do just as well.

I like to use medium–large king prawns that are caught in Port Lincoln in South Australia and snap-frozen straight away on the boats. They are very meaty and have a great flavour.

Ingredients

16 king prawns
salt
80ml extra virgin olive oil
3 garlic cloves, finely chopped
200ml white wine
6 ripe tomatoes, peeled and diced
1 handful basil leaves, chopped
freshly ground black pepper
200g feta cheese, cut into 12 x 3 cm cubes

Method

  1. Heat the oven to 200ºC.
  2. Shell the prawns, leaving the heads and tails intact. With a sharp knife, split each prawn along the back and carefully pull out the intestinal tube. Sprinkle the prawns lightly with salt.
  3. Heat the oil in a large frying pan. Add the prawns in batches and sauté on a medium-high heat for 2 minutes on each side, until pink and starting to turn crisp and golden brown. Add the garlic to the pan and sauté for 1 minute. Add the wine and cook for 1 minute until slightly reduced. Remove the prawns from the pan, dividing them evenly among 4 saganaki pans or an ovenproof dish.
  4. Add the diced tomatoes and basil to the frying pan and season with pepper. Cook for a couple of minutes, until the tomatoes are warmed through, then spoon over the prawns. Add 3 pieces of feta to each saganaki, or tuck them in among the prawns if using a large pan. Transfer to the oven for 5 minutes, until the cheese begins to soften. Take to the table to serve.
