Peaches poached in lemon syrup

Ingredients

Quantity Ingredient
450g sugar
300ml lemon juice
1 lemon, rind julienned
6 ripe peaches

Method

  1. Combine the sugar, lemon juice and rind in a heavy-based saucepan and heat gently until the sugar has completely dissolved. Increase the heat and bring to the boil. Drop the peaches into the boiling syrup then cover the surface with a circle of baking paper. Simmer gently for 5 minutes then remove from the heat and leave to cool.
