Every culture has something they eat when they are sick or feel under the weather. The Chinese have congee, for example, while others drink a soothing tea. In Spain we have this simple broth with thin pasta that feels like magic. I can’t tell you how many times I have eaten this.

Ingredients

Quantity Ingredient
1 tablespoon extra virgin olive oil
1 chicken stock cube
A pinch sweet pimenton
100g fideos or angel hair pasta
salt
freshly ground black pepper

Method

  1. In a small saucepan over a high heat, bring 600ml water, the oil, stock cube and sweet pimentón to the boil. Whisk vigorously to dissolve the stock cube completely.
  2. Add the pasta and boil it all together for a couple of minutes, or as per the manufacturer’s instructions. Season if needed and serve. Remember that the stock cubes tend to be quite salty, so it may be that it doesn’t need any extra salt.

Note

  • You can find fideos in the Jewish section in supermarkets. If you can’t find them just crush the thinnest spaghetti you can find between your hands into 2–3-cm pieces.
