Watermelon, tomato, coriander and goat cheese salad

Tomatoes are one of my top ingredients yet it is so hard to find good ones in non-sunny countries. Similarly, watermelon is in my top three fruits – so refreshing – and back in Spain they are so delicious. The mix of the two with the salty touch of the cheese makes a terrific salad.

Ingredients

Quantity Ingredient
200g peeled watermelon, Seeded and diced
500g yellow or heritage cherry tomatoes, halved
50g soft goat cheese
a few sprigs fresh coriander, Leaves separated and finely chopped

For the vinaigrette

Quantity Ingredient
1 garlic clove, Peeled
a good drizzle balsamic vinegar
1/2 red onion, thinly sliced
a handful black olives
a good drizzle extra virgin olive oil
A pinch sea salt

Method

  1. For the vinaigrette, crush the garlic clove with the side of a knife and mix it with the balsamic vinegar in a small bowl. Add the red onion, olives and the oil. Leave to marinate.
  2. Place the watermelon and tomatoes in a bowl. Crumble over the goat cheese and scatter with the coriander.
  3. Drizzle the vinaigrette over the salad, scatter with sea salt and serve.

Note

  • If you want to add some leaves to this salad, I recommend rocket (arugula).
