Penne pasta with chorizo and tomato sauce

This dish is so popular back home, to the extent that it was a school meal when I was a kid. The chorizo sausage makes a wonderful and rich tomato sauce that, combined with the penne pasta and cheese, turns this into a great lunch or dinner.

Ingredients

1 small onion, Chopped
2 garlic cloves, Sliced
1 chorizo sausage, diced
50ml olive oil
2 x 400 g tins chopped tomatoes
1 teaspoon dried oregano
1 tablespoon sugar
350g penne pasta
salt, Optional
a sprinkling of grated parmesan, to serve

Method

  1. Place the onion, garlic, chorizo and olive oil in a large pan over a medium heat. Cook for about 5 minutes, until the onion is soft and the chorizo has released its juices. Add the chopped tomatoes, oregano and sugar and cook until the sauce is rich and has reduced by at least two-thirds. Taste and add salt if needed.
  2. Bring 2 litres water to the boil, then add the pasta. Cook following the manufacturer’s instructions, but drain 2 minutes before the time is over, then add the pasta to the tomato sauce with 100ml of the cooking water. Give it a good stir over a high heat to mix all the ingredients thoroughly. Serve with a sprinkling of grated Parmesan cheese.
