Add chorizo to any dish and it will be transformed into something really tasty. In this case chorizo is the main event, so prepare yourself for an explosion of flavour. All you need is just three ingredients and a pan and you’ll have a great tapa to surprise your guests with.

Ingredients

Quantity Ingredient
4 fresh chorizo sausages
175ml white wine
1 teaspoon soft brown sugar
1 bay leaf
bread, to serve

Method

  1. Place the whole sausages in a pan together with the wine, sugar and bay leaf. Cook over a high heat for about 15 minutes. The wine should eventually reduce down to a rich syrup.
  2. Remove the sausages from the sauce and cut them into thick slices. Serve as a tapa with some bread to dip in the sauce.
