Marinated chicken skewers

The best thing about these skewers is that they can be prepared well in advance if you are making a BBQ, so there will be no hassle when you fire up the grill.

Ingredients

Quantity Ingredient
600g boneless and skinless chicken thighs
3 sprigs fresh coriander, finely chopped
1 garlic cloves, finely chopped
4 tablespoons olive oil
1 tablespoons honey
1 lemon, Grated zest and juice
1 tablespoon sweet pimenton
1 teaspoon ground turmeric
1 teaspoon ground cumin
A pinch ground black pepper
12 x 18cm wooden skewers, Soaked in water for 10 minutes

Method

  1. Cut each chicken thigh into 6 even-sized pieces and place in a non-metallic bowl.
  2. Mix together all the rest of the ingredients to make a marinade and pour over the chicken. Mix it all together, cover with plastic wrap and leave to marinate in the fridge for at least 30 minutes or up to 3 days.
  3. Preheat the oven to 200°C.
  4. Thread 6 pieces of chicken onto each skewer and season generously with salt.
  5. Roast for about 10 minutes, or until cooked through.

Note

  • You can of course replace the chicken thighs in this recipe with pork, lamb, turkey or whichever meat you prefer.
