Strawberries poached in brandy with a cheese cream

I love berries, and strawberries are my very favourites. I particularly like them with whipped cream. In this recipe, the strawberries have been lightly cooked and the whipped cream has a surprise addition. Together, they are such a treat.

Ingredients

Quantity Ingredient
300g strawberries
5 tablespoons caster sugar
25ml brandy
1 lime, grated zest

For the cheese cream

Quantity Ingredient
400ml double cream
1 vanila pod, Split open lengthways and seeds scraped
50g caster sugar
40g goat cheese

Method

  1. For the cheese cream, place a small pan over a low heat and add the cream, vanilla pod and seeds, sugar and goat cheese. Bring just to the boil and then take off the heat and blend to a smooth cream. Set aside to cool.
  2. Place the strawberries, 3 tablespoons of the sugar and the brandy in a small pan over a minimum heat. Cover and cook for 5 minutes, or until the sugar dissolves. Don’t let it boil. Set aside to cool.
  3. Mix the lime zest with the remaining 2 tablespoons sugar and spread out on a plate. Leave in a warm place to dry out.
  4. Once the cheese cream has cooled down, use a whisk to whip it to the consistency of whipped cream.
  5. Serve the poached strawberries topped with the cheese cream and sprinkled with the lime sugar.
