Truffled figs with bresaola and rocket

Sometimes the simple things are often the best… Once you’ve tried this recipe, it will be something you will make again and again. If you’ve never tasted truffled honey before, prepare to become addicted!

Ingredients

Quantity Ingredient
5 small figs, quartered
2 tablespoons truffled honey
2 tablespoons balsamic vinegar
2 tablespoons extra-virgin olive oil
40 thin bresaola slices
50g rocket leaves

Method

  1. Place the figs, honey, balsamic and olive oil into a bowl and allow the flavours to combine. When you are ready to serve, remove the figs from the dressing and set aside on a plate.
  2. Arrange 2 slices of bresaola around each piece of fig, tucking a few sprigs of rocket inside. This can be a little slippery so the best way to do it is: lay the bresaola down first, place the fig and rocket in the middle and tightly wrap the meat around, folding it down to expose the figs. Sit them upright and mould them on the plate gently.
  3. Drizzle with any extra dressing that is left in the bowl.
