Ingredients

Quantity Ingredient
Pâte sablée
Peanut butter dust
Whipped vanilla cream
Rum baba gelato, (just the crema gelato part of the recipe)

Method

  1. Assembly

    Once you have the first three components ready, churn the gelato following the instructions for the crema gelato.
  2. Scoop out the gelato and transfer to a pre-cooled stainless steel bowl; as you do this, layer in the whipped vanilla cream, pâte sablée and peanut butter dust, separating each layer with more gelato. Cover tightly with foil and immediately place in the freezer.
  3. You can also serve this gelato on a plate. Start by placing a dollop of the whipped vanilla cream on the centre of the plate. Place a scoop of the gelato on top of the cream, then where you see the cream ooze out at the bottom of the gelato, place the pâte sablée around the gelato. To finish, sprinkle the peanut butter dust all over the entire plate.
